We love a spot of baking at Timken Grange; not only is it a lot of fun and a great opportunity to have a good catch-up but the end result is a delicious treat to enjoy with friends.
This week we took a walk down memory lane and made Lardy Cake, a delicious soft, sticky bread, layered with spices, dried fruit and lard. Lardy Cake is very calorific and was popular with labourers who would enjoy it as a snack in the afternoon to keep them going.
If you haven’t tried it, you should give it a go; it’s easy to make and delicious served warm from the oven with a cup of tea.
It was so lovely to enjoy this treat again, it brought back a whole host of wonderful memories. Lardy Cake isn’t the healthiest of teatime treats, it’s not something you’d want to eat every day but from time to time, a little bit of what you fancy does you good.
